Truffles and More

When I was maybe ten, my mom bought me a book where I read how pigs sniff out truffles. I remember it was a fun and funny book, because there was an illustration of a pig wearing a beret, looking for truffles. I know a beret! I get the reference, wasn't it French food connoisseur Jean Anthelme Brillat-Savarin who called truffles "the diamond of the kitchen"? Then again, like diamonds, truffles are insanely expensive. Get this, Casino King Stanley Ho, who probably has a predilection for truffles, has paid over $300,000 for about a kilo of truffles. Not just once, but twice.

But since we all don't have casino empires for cash cows, you might want to check out Cecille Capistrano-Poblador's truffle enterprise, Truffles & More.

White Truffle Oil (Php 950/ 100 ml) - a few drops to make a rich enhancement to the flavor of 
salad and pasta. Makes pizza taste a whole lot better.

Truffle Salt 3.4 oz (Php 1,250/ 3.4 oz)- feel free to use this anywhere a recipe calls for salt. You can sprinkle it on top of almost anything. Turns omelettes into a decadent dish.

Truffle Tagliatelle (Php 1,100/ 8.8 oz) & Black Truffle Sauce (Php 1,100/ 3.2 oz) - an elegant main course in minutes. Serves 3 to 4 people. Black Truffle Oil (Php 850/ 100 ml)


Black Olive & Green Olive Tapenade (Php 550/ 8.8oz) - best on warm focaccia or toasted slices of baguette, spread in a very thin layer. It is also terrific on sandwiches. Spread it on the inside of the bread before you make a grilled cheese (best w/cheddar) or a fresh mozzarella and tomato sandwich. It's also a good dip for baby carrots or just about anything else.

Cecille particularly recommends the truffle salt and oil for eggs, steak and popcorn -- she says the bottle goes a long way as you don't need much, and the truffle honey for entertaining (served with a cheese platter or drizzled on top of toasted bread with goat cheese). The thought of these alone already puts me in a truffle tizzy. Yum!
